Ingredients
  • 1 (9 ounce) package cheese-filled tortellini, cooked al dente and cooled
  • ½ cup fat-free Italian dressing
  • 8 ounce block reduced-fat Swiss cheese, cubed
  • 2 cups baby spinach leaves
  • 32 pieces turkey pepperoni
  • 3½ cups cherry tomatoes
  • 16 wooden skewers (9-10 inch)
Instructions
  1. Marinate cooked tortellini in dressing for 30 minutes in refrigerator.
  2. Assemble skewers in this order: 2 tortellini, 1 cheese cube, 2 spinach leaves, 1 folded pepperoni, 1 tomato. Repeat pattern once per skewer.
  3. Refrigerate assembled skewers until ready to serve.
