Ingredients
- 1 (9 ounce) package cheese-filled tortellini, cooked al dente and cooled
- ½ cup fat-free Italian dressing
- 8 ounce block reduced-fat Swiss cheese, cubed
- 2 cups baby spinach leaves
- 32 pieces turkey pepperoni
- 3½ cups cherry tomatoes
- 16 wooden skewers (9-10 inch)
Instructions
- Marinate cooked tortellini in dressing for 30 minutes in refrigerator.
- Assemble skewers in this order: 2 tortellini, 1 cheese cube, 2 spinach leaves, 1 folded pepperoni, 1 tomato. Repeat pattern once per skewer.
- Refrigerate assembled skewers until ready to serve.
