Ingredients
- 1 cup oat or whole-wheat flour (use gluten-free if desired)
- 1 cup old-fashioned rolled oats (use gluten-free if desired)
- 2 tablespoons flaxseed meal
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon ground cinnamon
- Pinch of salt
- 1 large egg
- 1 (6-ounce) container plain Greek yogurt
- ½ cup unsweetened applesauce
- ½ cup brown sugar
- 1 teaspoon vanilla extract
- ¼ cup milk
- 1 Honeycrisp apple, chopped
Instructions
- Preheat oven to 350° F. Line muffin tin with wrappers or grease.
- Whisk flour, oats, flaxseed, baking powder, baking soda, cinnamon and salt.
- In separate bowl, mix egg, yogurt, applesauce, brown sugar, vanilla and milk.
- Pour wet ingredients into dry ingredients. Stir until just combined.
- Fold in chopped apples.
- Divide batter evenly among 12 muffin cups (¾ full).
- Bake 20-22 minutes until golden and toothpick comes out clean.
- Cool 10 minutes in pan before transferring to rack.
