Ingredients
  • 1 cup oat or whole-wheat flour (use gluten-free if desired)
  • 1 cup old-fashioned rolled oats (use gluten-free if desired)
  • 2 tablespoons flaxseed meal
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1 large egg
  • 1 (6-ounce) container plain Greek yogurt
  • ½ cup unsweetened applesauce
  • ½ cup brown sugar
  • 1 teaspoon vanilla extract
  • ¼ cup milk
  • 1 Honeycrisp apple, chopped
Instructions
  1. Preheat oven to 350° F. Line muffin tin with wrappers or grease.
  2. Whisk flour, oats, flaxseed, baking powder, baking soda, cinnamon and salt.
  3. In separate bowl, mix egg, yogurt, applesauce, brown sugar, vanilla and milk.
  4. Pour wet ingredients into dry ingredients. Stir until just combined.
  5. Fold in chopped apples.
  6. Divide batter evenly among 12 muffin cups (¾ full).
  7. Bake 20-22 minutes until golden and toothpick comes out clean.
  8. Cool 10 minutes in pan before transferring to rack.
