Ingredients
Asparagus:
- 1 pound fresh asparagus
- Olive oil
- 1 tablespoon butter
- ½ cup panko breadcrumbs
- 1 teaspoon lemon zest
Lemon Vinaigrette:
- 1 small garlic clove
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 3 tablespoons olive oil
- 1 tablespoon chopped fresh herbs, such as basil, oregano and thyme
- Salt and pepper
- 1 cup shaved Parmesan cheese
Instructions
- Prep asparagus by snapping off tough ends and coating with oil.
- Make crumbs: Melt butter, toast panko until golden, then mix in zest.
- Make vinaigrette: Whisk garlic, mustard and juice, then slowly whisk in oil. Add herbs and season.
- Grill asparagus until barely tender.
- Serve: Drizzle with vinaigrette, top with crumbs and Parmesan.
