Ingredients

Asparagus:

  • 1 pound fresh asparagus
  • Olive oil
  • 1 tablespoon butter
  • ½ cup panko breadcrumbs
  • 1 teaspoon lemon zest

Lemon Vinaigrette:

  • 1 small garlic clove
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 3 tablespoons olive oil
  • 1 tablespoon chopped fresh herbs, such as basil, oregano and thyme
  • Salt and pepper
  • 1 cup shaved Parmesan cheese
Instructions
  1. Prep asparagus by snapping off tough ends and coating with oil.
  2. Make crumbs: Melt butter, toast panko until golden, then mix in zest.
  3. Make vinaigrette: Whisk garlic, mustard and juice, then slowly whisk in oil. Add herbs and season.
  4. Grill asparagus until barely tender.
  5. Serve: Drizzle with vinaigrette, top with crumbs and Parmesan.
