Ingredients
  • 6 Tbsp. unsalted butter, softened
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 12 fresh oysters, shucked and on the half shell
  • 2 cloves garlic, minced
  • ½ tsp. smoked paprika
  • ½ tsp. garlic powder
  • 2 Tbsp. fresh parsley, chopped
  • freshly-ground black pepper, to taste
Instructions
  1. Preheat oven to 400 degrees.
  2. In a small bowl, combine the softened unsalted butter, minced garlic, smoked paprika and garlic powder. Stir until you have a smooth garlic butter paste.
  3. Arrange the shucked oysters on the half shell on a baking sheet. You can place them on a bed of rock salt to keep them from tipping.
  4. Top each oyster with about ½ teaspoon of the prepared garlic butter.
  5. Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the oysters.
  6. Bake for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Garnish with the chopped fresh parsley and a dash of freshly-ground black pepper before serving.
