Ingredients
- 6 Tbsp. unsalted butter, softened
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- 12 fresh oysters, shucked and on the half shell
- 2 cloves garlic, minced
- ½ tsp. smoked paprika
- ½ tsp. garlic powder
- 2 Tbsp. fresh parsley, chopped
- freshly-ground black pepper, to taste
Instructions
- Preheat oven to 400 degrees.
- In a small bowl, combine the softened unsalted butter, minced garlic, smoked paprika and garlic powder. Stir until you have a smooth garlic butter paste.
- Arrange the shucked oysters on the half shell on a baking sheet. You can place them on a bed of rock salt to keep them from tipping.
- Top each oyster with about ½ teaspoon of the prepared garlic butter.
- Sprinkle the shredded mozzarella cheese and grated Parmesan cheese evenly over the oysters.
- Bake for 10-12 minutes, or until the cheese is melted and bubbly.
- Garnish with the chopped fresh parsley and a dash of freshly-ground black pepper before serving.
