Ingredients
Ricotta Cream:
- 1 cup part-skim ricotta
- 3 ounces cream cheese
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Balsamic Strawberries:
- 3 tablespoons balsamic vinegar
- 2 tablespoons granulated sugar
- 1 pound fresh strawberries, quartered
- 1 tablespoon fresh basil, julienned
Instructions
- Make Ricotta Cream:
- Whip ricotta, cream cheese, powdered sugar and vanilla until smooth
- Divide into 6 serving dishes and chill
- Prepare Balsamic Syrup:
- Simmer vinegar and sugar 2-3 minutes until slightly thickened
- Cool completely
- Assemble:
- Toss strawberries with cooled syrup
- Spoon over ricotta cream
- Garnish with fresh basil
