Ingredients

Ricotta Cream:

  • 1 cup part-skim ricotta
  • 3 ounces cream cheese
  • 2 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Balsamic Strawberries:

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons granulated sugar
  • 1 pound fresh strawberries, quartered
  • 1 tablespoon fresh basil, julienned
Instructions
  1. Make Ricotta Cream:
    • Whip ricotta, cream cheese, powdered sugar and vanilla until smooth
    • Divide into 6 serving dishes and chill
  2. Prepare Balsamic Syrup:
    • Simmer vinegar and sugar 2-3 minutes until slightly thickened
    • Cool completely
  3. Assemble:
    • Toss strawberries with cooled syrup
    • Spoon over ricotta cream
    • Garnish with fresh basil
