Ingredients

For Pizza:

  • 1 basic Italian pizza dough portion
  • ¼ cup barbecue sauce
  • 1 cup cooked shrimp
  • Salt and pepper
  • ½ lime
  • 6 ounces (1½ cups) shredded mozzarella cheese
  • ¼ cup cilantro, chopped
  • ¼ cup red onion, finely chopped

For Dough:

  • 3¼ cups bread flour
  • 1 tablespoon rye flour
  • 1 envelope active dry yeast
  • 1 teaspoon kosher salt
  • 1½-2 cups warm water
  • 1½ teaspoons honey
  • Olive oil for greasing
Instructions
  1. Make Dough: Mix flours, yeast and salt. Add honey-water mixture. Knead, rise 1 hour. Divide into 2 balls.
  2. Prep Pizza: Roll dough to 12-inch circle. Pre-bake 6 minutes at 375° F.
  3. Assemble: Spread BBQ sauce, add seasoned shrimp and cheese.
  4. Bake: 4 minutes until cheese melts.
  5. Top: Add cilantro and onion. Serve immediately.
