1 ½ cups sugar
½ teaspoon cinnamon
⅛ teaspoon nutmeg
5 eggs
½ teaspoon salt
3 cups half-and-half
10 cups butter croissants, cut in 1-inch cubes
½ cup butter
6 tablespoons brown sugar
6 tablespoons sugar
½ cup whipping cream or half-and-half
1 teaspoon vanilla
For the pudding:
1. Preheat oven to 350° F. Coat a 9-by-13-inch baking dish with cooking spray.
2. In a large bowl, mix sugar, cinnamon and nutmeg.
3. Mix in eggs, salt and half-and-half.
4. Add croissants and gently stir.
5. Pour into dish; press on croissants to absorb cream mixture.
6. Bake for 40 minutes until top is puffed and golden and center is set.
7. Let rest for 5 minutes. Serve warm with sauce.
For the sauce:
1. Whisk butter, brown sugar and sugar in a heavy medium-size saucepan over medium heat until butter melts.
2. Whisk in cream and stir until sugar dissolves and sauce is smooth, about 3 minutes.
3. Stir in vanilla.
4. Serve warm sauce over pudding.
5. Store unused sauce in refrigerator. To serve, microwave briefly until sauce is pourable.
