Ingredients
  • 1 cup cottage cheese
  • ¼ medium cucumber, diced
  • 7-10 cherry tomatoes, halved
  • ¼ medium red onion, diced
  • 1 Tbsp. white wine vinegar
  • 1 tsp. fresh dill or parsley
  • Cracked pepper, to taste
  • Salt, to taste
     
Instructions
  1. Dice the cucumber and red onion. Halve the cherry tomatoes.
  2. In a bowl, combine the cottage cheese, all the vegetables, white wine vinegar and your choice of fresh herbs like dill or parsley.
  3. Add salt and cracked pepper to your liking.
  4. Stir everything together until it is well mixed.
  5. Serve immediately with your favorite vegetables or crackers for dipping.
