Ingredients
- 1 cup cottage cheese
- ¼ medium cucumber, diced
- 7-10 cherry tomatoes, halved
- ¼ medium red onion, diced
- 1 Tbsp. white wine vinegar
- 1 tsp. fresh dill or parsley
- Cracked pepper, to taste
- Salt, to taste
Instructions
- Dice the cucumber and red onion. Halve the cherry tomatoes.
- In a bowl, combine the cottage cheese, all the vegetables, white wine vinegar and your choice of fresh herbs like dill or parsley.
- Add salt and cracked pepper to your liking.
- Stir everything together until it is well mixed.
- Serve immediately with your favorite vegetables or crackers for dipping.
