Ingredients
  • 4 Tbsp. salted butter
  • 4 Tbsp. flour
  • 2 cups pale low-hop beer (Pilsner)
  • 1 cup whole milk 
  • 1 tsp. mustard
  • 1 tsp. paprika
  • Dash of Worcestershire sauce
  • 4 cups sharp cheddar cheese, shredded
Instructions
  1. In a medium frying pan, melt the butter over medium heat.
  2. Whisk in the flour and cook for 1-2 minutes until the mixture has turned a nice golden color.
  3. While whisking, gradually pour in the beer and then the milk. Both should thicken as they heat.
  4. Remove from the heat and stir in the spices, Worcestershire sauce and cheese.
  5. Let the cheese melt; season to taste with salt and pepper.

 

Notes/Additions

  • To spice it up like Scotty Scott, add pickled jalapenos and drizzle over a soft pretzel.
  • To add the MonsoonGG flare, serve over french fries with a side of sour cream and chives.
