Ingredients
- 1 Tbsp. olive oil
- 3 garlic cloves, minced
- 1 bunch scallions
- 2 Tbsp. tomato paste
- 1 Tbsp. chili crisp, or to taste
- ½ tsp. salt
- ½ tsp. black pepper
- 2 (15-oz.) cans white beans, drained and rinsed
- 2 cups shredded cheddar cheese
Instructions
- Preheat the oven to 400 degrees.
- Slice the scallions, keeping the white parts and green parts separate.
- In a large skillet over medium heat, sauté the minced garlic and the white parts of the scallions in olive oil until softened.
- Mix in tomato paste and chili crisp to taste.
- Stir in the white beans and season with salt and black pepper.
- Top the mixture with grated cheddar cheese.
- Bake the skillet at 400 degrees for 7 to 8 minutes until the cheese has melted and is bubbly.
- Garnish with the green parts of the scallions and enjoy.
