Ingredients
  • 1 Tbsp. olive oil
  • 3 garlic cloves, minced
  • 1 bunch scallions
  • 2 Tbsp. tomato paste
  • 1 Tbsp. chili crisp, or to taste
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 2 (15-oz.) cans white beans, drained and rinsed
  • 2 cups shredded cheddar cheese
Instructions
  1. Preheat the oven to 400 degrees.
  2. Slice the scallions, keeping the white parts and green parts separate.
  3. In a large skillet over medium heat, sauté the minced garlic and the white parts of the scallions in olive oil until softened.
  4. Mix in tomato paste and chili crisp to taste.
  5. Stir in the white beans and season with salt and black pepper.
  6. Top the mixture with grated cheddar cheese.
  7. Bake the skillet at 400 degrees for 7 to 8 minutes until the cheese has melted and is bubbly.
  8. Garnish with the green parts of the scallions and enjoy.
