Ingredients
- 2 (6-ounce) jars marinated artichoke hearts
- 1 small onion
- 3 cloves garlic
- 4 large eggs
- Salt and freshly ground black pepper to taste
- ¼ teaspoon oregano
- Dash hot sauce
- 2 teaspoons minced parsley
- ¼ cup crushed saltine crackers
- ½ cup grated sharp cheddar cheese (plus ¼ cup for topping)
Instructions
- Preheat oven to 325° F.
- Drain artichokes, reserving juice, and finely chop.
- Sauté onions and garlic in reserved artichoke liquid until translucent (3-4 minutes).
- In bowl, beat eggs. Add artichokes, onion mixture and remaining ingredients.
- Spread evenly in greased 9-by-9-inch pan. Top with extra cheese if desired.
- Bake 30 minutes. Cool and cut into squares.
