Ingredients
Chicken-Fried Shrimp:
- Vegetable oil for frying
- 1 pound large shrimp (16/20 count)
- 1 cup flour
- 3 eggs
- ½ cup lactose-free whole milk
- Salt and pepper
- 1 lemon
Green Onion Gravy:
- 2 bunches green onions
- 4 tablespoons butter
- ¼ cup flour
- 2 cups lactose-free whole milk
- Salt and pepper
Watermelon-Jalapeño Salad:
- 1 jalapeño, diced
- ½ cup crumbled feta cheese
- 3 cups cubed watermelon
- 1 lemon
- Salt and pepper
Instructions
For Shrimp:
- Heat oil to 350° F. Skewer 2 shrimp per skewer.
- Set up dredging station: flour in one dish, beaten eggs with milk in another.
- Season shrimp, dredge in flour, dip in egg, then flour again.
- Fry 2 skewers at a time until golden. Drain and season with lemon.
For Gravy:
- Cook white parts of onions in butter until tender.
- Add the flour and cook for 2 minutes, whisking constantly to prevent burning.
- Whisk in milk and continue to cook until thickened. Season and add green onions.
For Salad:
- Combine jalapeño, feta and watermelon.
- Season with lemon juice, salt and pepper. Marinate 30 minutes.
