Ingredients

Chicken-Fried Shrimp:

  • Vegetable oil for frying
  • 1 pound large shrimp (16/20 count)
  • 1 cup flour
  • 3 eggs
  • ½ cup lactose-free whole milk
  • Salt and pepper
  • 1 lemon

Green Onion Gravy:

  • 2 bunches green onions
  • 4 tablespoons butter
  • ¼ cup flour
  • 2 cups lactose-free whole milk
  • Salt and pepper

Watermelon-Jalapeño Salad:

  • 1 jalapeño, diced
  • ½ cup crumbled feta cheese
  • 3 cups cubed watermelon
  • 1 lemon
  • Salt and pepper
Instructions

For Shrimp:

  1. Heat oil to 350° F. Skewer 2 shrimp per skewer.
  2. Set up dredging station: flour in one dish, beaten eggs with milk in another.
  3. Season shrimp, dredge in flour, dip in egg, then flour again.
  4. Fry 2 skewers at a time until golden. Drain and season with lemon.

For Gravy:

  1. Cook white parts of onions in butter until tender.
  2. Add the flour and cook for 2 minutes, whisking constantly to prevent burning.
  3. Whisk in milk and continue to cook until thickened. Season and add green onions.

For Salad:

  1. Combine jalapeño, feta and watermelon.
  2. Season with lemon juice, salt and pepper. Marinate 30 minutes.
