- 13-15 cups dry French bread cubes, about two 1-pound loaves
- 1 ½ cups unsalted butter
- 1 cup celery, chopped
- 1 cup yellow onion, diced
- 2 ¼ tsp. salt
- 1 tsp. ground black pepper
- 1 ½ Tbsp. poultry seasoning
- 1 ½ cups chicken stock
- 2 large eggs
1. The day before preparing, cut two loaves of dry French bread into cubes and let them dry out.
2. Once bread is dried, preheat your oven to 350 degrees. In a large skillet, melt the butter over medium heat.
3. Add the chopped celery and diced yellow onion, and sauté them for about 10 minutes, until tender.
4. Remove the skillet from the heat and stir in the salt, black pepper and poultry seasoning.
5. In a very large bowl, combine the dry French bread cubes with the warm vegetable mixture. Pour in the chicken stock and beaten eggs, then toss everything together until the bread cubes are evenly moistened.
6. Transfer the stuffing into a prepared baking dish. Cover it with foil and bake for 30 minutes.
7. Finally, remove the foil and bake for another 15 minutes, or until the top is crispy and golden brown.
