Ingredients
  • 1 red onion, finely chopped
  • ¼ cup red vinegar
  • 2 Tbsp. olive oil
  • 1 tsp. oregano
  • 2 large cucumbers, sliced into rounds or half-moons
  • 1 cup Greek yogurt
  • Juice of ½ lemon
  • 1 sprig fresh dill, chopped
Instructions
  1. In a small bowl, marinate the chopped red onion in the vinegar, olive oil and oregano.
  2. In a large bowl, make the dressing by mixing together 1 cup Greek yogurt, the fresh-squeezed lemon juice and chopped dill.
  3. Combine the marinated onions and the sliced cucumbers with the Greek yogurt dressing and enjoy.
