Ingredients
- 1 red onion, finely chopped
- ¼ cup red vinegar
- 2 Tbsp. olive oil
- 1 tsp. oregano
- 2 large cucumbers, sliced into rounds or half-moons
- 1 cup Greek yogurt
- Juice of ½ lemon
- 1 sprig fresh dill, chopped
Instructions
- In a small bowl, marinate the chopped red onion in the vinegar, olive oil and oregano.
- In a large bowl, make the dressing by mixing together 1 cup Greek yogurt, the fresh-squeezed lemon juice and chopped dill.
- Combine the marinated onions and the sliced cucumbers with the Greek yogurt dressing and enjoy.
