Ingredients
  • 1 lb. ground beef
  • 1 pkg. taco seasoning, divided
  • ½ tsp. salt
  • ½ tsp. black pepper
  • 8 tortillas
  • 2 Tbsp. olive oil
  • 1 cup shredded cheddar cheese
  • 1 cup Greek yogurt
Instructions
  1. In a medium bowl, season the ground beef with half of the package of taco seasoning and the salt and pepper.
  2. Divide the beef into 8 portions and smash each portion onto a tortilla in a thin, even layer.
  3. In a large pan over medium heat, add a dash of olive oil.
  4. Place the tortilla beef-side down in the pan and cook until the beef is thoroughly browned.
  5. Flip the tortilla beef-side up and top with shredded cheddar cheese.
  6. Once the tortilla is crispy and the cheese is melted, fold the tortilla in half and remove from the pan.
  7. Repeat with the remaining tortillas.
  8. In a small bowl, make the dipping sauce: Mix Greek yogurt with the remaining half package of taco seasoning and a dash of water to reach your desired consistency.
