Ingredients
- 1 lb. ground beef
- 1 pkg. taco seasoning, divided
- ½ tsp. salt
- ½ tsp. black pepper
- 8 tortillas
- 2 Tbsp. olive oil
- 1 cup shredded cheddar cheese
- 1 cup Greek yogurt
Instructions
- In a medium bowl, season the ground beef with half of the package of taco seasoning and the salt and pepper.
- Divide the beef into 8 portions and smash each portion onto a tortilla in a thin, even layer.
- In a large pan over medium heat, add a dash of olive oil.
- Place the tortilla beef-side down in the pan and cook until the beef is thoroughly browned.
- Flip the tortilla beef-side up and top with shredded cheddar cheese.
- Once the tortilla is crispy and the cheese is melted, fold the tortilla in half and remove from the pan.
- Repeat with the remaining tortillas.
- In a small bowl, make the dipping sauce: Mix Greek yogurt with the remaining half package of taco seasoning and a dash of water to reach your desired consistency.
