Ingredients
- ¼ cup unsalted butter, softened, divided
- 1 Tbsp. olive oil
- 2 large yellow onions, thinly sliced
- 1½ tsp. kosher salt, divided
- ¾ tsp. black pepper
- ¾ cup sour cream
- ¼ cup mayonnaise
- 1 tsp. Dijon mustard
- ½ tsp. garlic powder
- ½ tsp. Worcestershire sauce
- 2 lbs. ground beef
- 1 tsp. kosher salt
- ½ tsp. black pepper
- 8 slices sharp white cheddar cheese
- 8 slices mild orange cheddar cheese
- 4 brioche burger buns
- Curly leaf lettuce, for serving
- Tomato slices, for serving
- Pickle slices, for serving
Instructions
- Heat 2 tablespoons of butter and olive oil in a large skillet over medium heat. Add onions, ½ teaspoon of salt, and ¼ teaspoon of pepper, and cook, stirring occasionally, until caramelized and golden-brown, about 15-20 minutes. Remove from heat and let cool slightly.
- Combine sour cream, mayonnaise, mustard, garlic powder and Worcestershire sauce in a medium bowl until smooth. Fold in warm caramelized onions and set aside.
- Heat a cast-iron skillet or griddle over high heat until very hot.
- Divide ground beef into 8, 4-ounce portions. One or two at a time, place meat portions into the pan and immediately smash until thin using a heavy spatula or burger press. Season lightly with remaining salt and pepper and cook until browned and crispy, about 2-3 minutes.
- Flip burger patties and immediately top each with one slice of sharp white cheddar and then with mild orange cheddar. Cook patties, until cheese is melted, an additional 1-2 minutes. Repeat with remaining meatballs until all patties are cooked.
- Brush burger buns with remaining butter and toast, cut-side-down, in the skillet until golden-brown.
- On each toasted bun, spread a generous layer of caramelized onion sour cream sauce. Top each evenly with lettuce, tomato, 2 cheesy smash patties and pickles. Serve and enjoy.
