Ingredients

For Enchiladas:

  • 3 ounces cream cheese
  • 2 cups chopped cooked chicken breast
  • 12 ounces chunky salsa, divided
  • 1 cup shredded Mexican-blend cheese, divided
  • 8 (6-inch) flour tortillas

For Yogurt Sauce:

  • 2 cups low-fat plain yogurt
  • 1 cup chopped cilantro
  • 1 teaspoon ground cumin
Instructions
  1. Preheat oven to 350° F. Grease 7-by-11-inch baking dish.
  2. Melt cream cheese in skillet. Add chicken and ½ cup salsa.
  3. Stir in ½ cup cheese until melted.
  4. Fill tortillas with ⅓ cup mixture each; roll up.
  5. Arrange seam-side down in dish. Top with remaining salsa and cheese.
  6. Bake 15-20 minutes until heated through.
  7. Mix yogurt, cilantro and cumin for sauce.
