Ingredients
For Enchiladas:
- 3 ounces cream cheese
- 2 cups chopped cooked chicken breast
- 12 ounces chunky salsa, divided
- 1 cup shredded Mexican-blend cheese, divided
- 8 (6-inch) flour tortillas
For Yogurt Sauce:
- 2 cups low-fat plain yogurt
- 1 cup chopped cilantro
- 1 teaspoon ground cumin
Instructions
- Preheat oven to 350° F. Grease 7-by-11-inch baking dish.
- Melt cream cheese in skillet. Add chicken and ½ cup salsa.
- Stir in ½ cup cheese until melted.
- Fill tortillas with ⅓ cup mixture each; roll up.
- Arrange seam-side down in dish. Top with remaining salsa and cheese.
- Bake 15-20 minutes until heated through.
- Mix yogurt, cilantro and cumin for sauce.
