Ingredients
- 4 medium russet potatoes
- 2 teaspoons canola oil
- Sea salt
- 4 teaspoons butter (optional)
- 1 cup cottage cheese
- 1 cup shredded sharp cheddar cheese
- ¼-½ cup salsa
Instructions
- Preheat oven to 400° F. Scrub and dry potatoes.
- Pierce potatoes, rub with oil and salt, then bake 60-75 minutes until tender.
- Slice potatoes lengthwise and fluff insides.
- Layer each with butter, ¼ cup cottage cheese, ¼ cup cheddar and 1-2 tbsp salsa.
Notes/Additions
- Slow cooker method: Wrap in foil and cook on low 7-8 hrs or high 4½-5 hrs
- Try with pulled pork and barbecue sauce, broccoli and cheese, or taco meat
