Ingredients
  • 4 medium russet potatoes
  • 2 teaspoons canola oil
  • Sea salt
  • 4 teaspoons butter (optional)
  • 1 cup cottage cheese
  • 1 cup shredded sharp cheddar cheese
  • ¼-½ cup salsa
Instructions
  1. Preheat oven to 400° F. Scrub and dry potatoes.
  2. Pierce potatoes, rub with oil and salt, then bake 60-75 minutes until tender.
  3. Slice potatoes lengthwise and fluff insides.
  4. Layer each with butter, ¼ cup cottage cheese, ¼ cup cheddar and 1-2 tbsp salsa.

Notes/Additions

  • Slow cooker method: Wrap in foil and cook on low 7-8 hrs or high 4½-5 hrs
  • Try with pulled pork and barbecue sauce, broccoli and cheese, or taco meat
