Ingredients
- ¼ cup cottage cheese
- 1 boiled egg
- 1 slice toasted sourdough
- 1 small avocado, smashed
- Everything bagel seasoning
Instructions
- Place the egg in a small pot and cover it with cold water. Make sure the water level is about an inch above the egg.
- Bring the water to a full boil over high heat.
- Once the water boils, turn off the heat and cover the pot with a lid.
- Let the egg sit in the hot water for 10-12 minutes for a hard-boiled egg.
- After the time is up, carefully transfer the egg to a bowl of ice water to stop the cooking process.
- Once the egg is cool, peel and grate it.
- In a small bowl, mash the avocado with a fork.
- Spread the smashed avocado evenly over the toasted sourdough.
- Next, spread the cottage cheese over the avocado layer.
- Sprinkle the grated boiled egg on top.
- Finish the toast with a sprinkle of everything bagel seasoning to taste.
Notes/Additions
For some extra heat, top your toast with a ½ teaspoon of chili crunch oil.
