Ingredients
  • 1 cup rolled oats
  • ⅓ cup nuts of choice
  • ¼ tsp. salt
  • 1 tsp. cinnamon
  • 1 Tbsp. melted butter
  • ⅛-¼ cup maple syrup or honey
  • 1 Tbsp. peanut butter (optional)
  • 1 Tbsp. flax seeds
  • 60 oz. fat-free Greek yogurt
     
Instructions
  1. First, set your oven to 300 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, combine the oats, nuts, salt and cinnamon. Stir gently until everything is mixed.
  3. Pour the melted butter, maple syrup (or honey) and the optional peanut butter into the bowl. Mix until the ingredients are evenly coated.
  4. Sprinkle the flaxseeds over the mixture and give it one final mix.
  5. Spread the granola mixture evenly on the prepared baking sheet.
  6. Bake for 20-30 minutes, checking after 15 minutes and every few minutes after that. The granola is done when it's golden brown and fragrant.
  7. Let the granola cool completely in the pan before transferring it to an airtight container.
  8. To serve, place 6 ounces of Greek yogurt in a bowl or parfait glass and top with ¼ cup of the granola. Makes 10 servings total.
