Ingredients
- 1 cup rolled oats
- ⅓ cup nuts of choice
- ¼ tsp. salt
- 1 tsp. cinnamon
- 1 Tbsp. melted butter
- ⅛-¼ cup maple syrup or honey
- 1 Tbsp. peanut butter (optional)
- 1 Tbsp. flax seeds
- 60 oz. fat-free Greek yogurt
Instructions
- First, set your oven to 300 degrees and line a baking sheet with parchment paper.
- In a large bowl, combine the oats, nuts, salt and cinnamon. Stir gently until everything is mixed.
- Pour the melted butter, maple syrup (or honey) and the optional peanut butter into the bowl. Mix until the ingredients are evenly coated.
- Sprinkle the flaxseeds over the mixture and give it one final mix.
- Spread the granola mixture evenly on the prepared baking sheet.
- Bake for 20-30 minutes, checking after 15 minutes and every few minutes after that. The granola is done when it's golden brown and fragrant.
- Let the granola cool completely in the pan before transferring it to an airtight container.
- To serve, place 6 ounces of Greek yogurt in a bowl or parfait glass and top with ¼ cup of the granola. Makes 10 servings total.
