Ingredients
  • ½ cup ricotta cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1 garlic clove, minced
  • ¼ teaspoon salt
  • 4 boneless, skinless chicken breasts (6 oz each)
  • 1 tablespoon olive oil
  • 4 slices Swiss cheese
Instructions
  1. In a bowl, mix ricotta, Parmesan, basil, garlic and salt.
  2. Cut a 3-inch horizontal pocket in the thickest side of each chicken breast.
  3. Stuff each pocket with 2 tablespoons cheese mixture. Press closed and secure with toothpicks.
  4. Brush chicken with olive oil on both sides.
  5. Grill over medium-high heat:
    • 5 minutes first side
    • 6-8 minutes second side
  6. During last minute, top each breast with Swiss cheese to melt.
