Ingredients
- ½ cup ricotta cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
- 1 garlic clove, minced
- ¼ teaspoon salt
- 4 boneless, skinless chicken breasts (6 oz each)
- 1 tablespoon olive oil
- 4 slices Swiss cheese
Instructions
- In a bowl, mix ricotta, Parmesan, basil, garlic and salt.
- Cut a 3-inch horizontal pocket in the thickest side of each chicken breast.
- Stuff each pocket with 2 tablespoons cheese mixture. Press closed and secure with toothpicks.
- Brush chicken with olive oil on both sides.
- Grill over medium-high heat:
- 5 minutes first side
- 6-8 minutes second side
- During last minute, top each breast with Swiss cheese to melt.
