Ingredients
For Pizza:
- 1 whole-wheat pizza dough portion
- 1 tablespoon cornmeal
- ¼ cup favorite brand of Houston barbecue sauce
- 1 cup grated cheddar cheese
- 2 medium tomatoes
- 2 small jalapeños
- 1 cup chopped smoked beef brisket
- Fresh cilantro
- Ranch dressing (optional)
For Whole-Wheat Pizza Dough:
- 1 ½ cups whole-wheat flour
- 1 cup bread flour
- 1 envelope active dry yeast (about 2 ½ teaspoons)
- ½ teaspoon salt
- 1 tablespoon honey
- 1-1 ½ cups warm water (105°-110° F)
Instructions
For Pizza:
- Preheat oven to 450° F. Sprinkle baking sheet with cornmeal.
- Shape dough and place on baking sheet.
- Coat dough with barbecue sauce.
- Top with cheese, tomatoes, jalapeños and brisket.
- Bake 8-12 minutes until cheese is bubbly.
- Garnish with cilantro and ranch if desired.
For Dough:
- Mix flours, yeast and salt in food processor.
- Combine honey and water. Gradually add to flour mixture.
- Knead dough until soft and elastic.
- Let rise 1-2 hours until doubled.
- Punch down and rest 15-20 minutes before shaping.
