Ingredients

For Pizza:

  • 1 whole-wheat pizza dough portion
  • 1 tablespoon cornmeal
  • ¼ cup favorite brand of Houston barbecue sauce
  • 1 cup grated cheddar cheese
  • 2 medium tomatoes
  • 2 small jalapeños
  • 1 cup chopped smoked beef brisket
  • Fresh cilantro
  • Ranch dressing (optional)

For Whole-Wheat Pizza Dough:

  • 1 ½ cups whole-wheat flour
  • 1 cup bread flour
  • 1 envelope active dry yeast (about 2 ½ teaspoons)
  • ½ teaspoon salt
  • 1 tablespoon honey
  • 1-1 ½ cups warm water (105°-110° F)
Instructions

For Pizza:

  1. Preheat oven to 450° F. Sprinkle baking sheet with cornmeal.
  2. Shape dough and place on baking sheet.
  3. Coat dough with barbecue sauce.
  4. Top with cheese, tomatoes, jalapeños and brisket.
  5. Bake 8-12 minutes until cheese is bubbly.
  6. Garnish with cilantro and ranch if desired.

For Dough:

  1. Mix flours, yeast and salt in food processor.
  2. Combine honey and water. Gradually add to flour mixture.
  3. Knead dough until soft and elastic.
  4. Let rise 1-2 hours until doubled.
  5. Punch down and rest 15-20 minutes before shaping.
