Ingredients
- 1 pound lean ground beef
- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 small head cabbage, chopped
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 cup reduced sodium beef broth
- 1 (8-ounce) can tomato sauce
- 1 cup cooked brown rice
- ½ cup shredded reduced-fat cheddar cheese
Instructions
- Brown ground beef with onion and pepper in Dutch oven; drain fat.
- Add cabbage, tomatoes, broth and tomato sauce. Bring to boil.
- Reduce heat, cover and simmer 20-25 minutes until cabbage is tender.
- Stir in cooked rice and heat through.
- Remove from heat, top with cheese and cover to melt.
Notes/Additions
- Time-Saver: Use pre-shredded coleslaw mix
- Spice It Up: Add ½ teaspoon crushed red pepper
