Ingredients
  • 1 pound lean ground beef
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 1 small head cabbage, chopped
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 cup reduced sodium beef broth
  • 1 (8-ounce) can tomato sauce
  • 1 cup cooked brown rice
  • ½ cup shredded reduced-fat cheddar cheese
Instructions
  1. Brown ground beef with onion and pepper in Dutch oven; drain fat.
  2. Add cabbage, tomatoes, broth and tomato sauce. Bring to boil.
  3. Reduce heat, cover and simmer 20-25 minutes until cabbage is tender.
  4. Stir in cooked rice and heat through.
  5. Remove from heat, top with cheese and cover to melt.

Notes/Additions

  • Time-Saver: Use pre-shredded coleslaw mix
  • Spice It Up: Add ½ teaspoon crushed red pepper
  • Storage: Keeps refrigerated for 3 days
