Ingredients
- 4 slices sourdough bread
- 2 large portobello mushrooms, sliced
- 1 red bell pepper, sliced
- 1 onion, sliced
- Olive oil cooking spray
- 2 tablespoons crumbled blue cheese
- 2 slices low-fat Monterey Jack cheese
Instructions
- Sauté mushrooms, pepper and onion in sprayed pan for 2 minutes.
- Assemble sandwiches:
- Spray bread exteriors
- Layer: Jack cheese → veggies → blue cheese
- Grill 2 minutes per side until golden.
Notes/Additions
- Cheese Options: Substitute gorgonzola for blue cheese
- Bread Choice: Ciabatta works well, too
