Ingredients

Base Layer:

  • 1 cup buttermilk baking mix
  • ¼ cup milk
  • ½ cup finely chopped onion
  • 2 eggs

Spinach Layer:

  • 1 (10-ounce) package frozen spinach (thawed, drained)
  • 1½ cups small-curd cottage cheese
  • ½ cup grated Parmesan cheese
  • 4 ounces Monterey Jack cheese (cubed)
  • 2 cloves garlic (crushed)
  • 2 eggs
Instructions
  1. Preheat oven to 375° F. Grease a 12-x-8 inch baking dish.
  2. Make Base: Mix baking mix, milk, onion and 2 eggs; beat 20 strokes. Spread in dish.
  3. Make Topping: Combine spinach, cheeses, garlic and remaining 2 eggs. Spread over base.
  4. Bake 30 minutes until set. Rest 5 minutes before serving.

Notes/Additions

  • Fresh Spinach: Substitute 10 ounces fresh (steamed and squeezed dry)
  • Make Ahead: Refrigerate unbaked up to 24 hours
  • Serving Tip: Cut into squares for easy serving
