Ingredients
Base Layer:
- 1 cup buttermilk baking mix
- ¼ cup milk
- ½ cup finely chopped onion
- 2 eggs
Spinach Layer:
- 1 (10-ounce) package frozen spinach (thawed, drained)
- 1½ cups small-curd cottage cheese
- ½ cup grated Parmesan cheese
- 4 ounces Monterey Jack cheese (cubed)
- 2 cloves garlic (crushed)
- 2 eggs
Instructions
- Preheat oven to 375° F. Grease a 12-x-8 inch baking dish.
- Make Base: Mix baking mix, milk, onion and 2 eggs; beat 20 strokes. Spread in dish.
- Make Topping: Combine spinach, cheeses, garlic and remaining 2 eggs. Spread over base.
- Bake 30 minutes until set. Rest 5 minutes before serving.
Notes/Additions
- Fresh Spinach: Substitute 10 ounces fresh (steamed and squeezed dry)
- Make Ahead: Refrigerate unbaked up to 24 hours
