Ingredients
For dressing:
- ¾ cup plain Greek yogurt
- ¼ cup mayonnaise
- 2 Tbsp. fresh lemon juice
- 1 Tbsp. Dijon mustard
- 1 tsp. garlic powder
- ½ cup finely shredded Parmesan cheese
- ½ tsp. kosher salt
- ¼ tsp. black pepper
For salad:
- 3 cups romaine lettuce, finely chopped
- 1 cup cherry tomatoes, chopped
- ½ cup cucumber, finely diced
- ⅓ cup red onion, finely diced
- 3 cups cooked chicken breast, finely chopped or shredded
- ½ cup cooked bacon, chopped
- 2 cups mozzarella or sharp cheddar cheese, shredded
- Chopped fresh chives, for garnish
Instructions
- Combine yogurt, mayonnaise, lemon juice, mustard, garlic powder, Parmesan, salt and pepper in a medium bowl, and mix until smooth and creamy.
- Place lettuce, cherry tomatoes, cucumber, red onion, chicken, bacon and mozzarella cheese in a large serving bowl.
- Drizzle with dressing and toss gently to coat. Cover and chill for at least 10 minutes, or until ready to serve. Garnish with chives, and serve.
Notes and Additions
For extra tangy flavor, consider sour cream instead of Greek yogurt or sharp cheddar cheese instead of mozzarella.
