Ingredients
  • ½ tablespoon butter
  • ¼ cup chopped broccoli florets
  • 1 chopped green onion
  • 2 tablespoons diced red bell pepper
  • 2 large eggs, beaten
  • 1 whole-wheat English muffin, split in half
  • ¼ cup shredded pepper jack cheese (or 2 slices pepper jack cheese)
  • 2 tablespoons favorite salsa
  • Salt and freshly ground black pepper, to taste
Instructions
  1. Preheat broiler.
  2. Heat a small nonstick skillet over medium heat; melt butter, then add broccoli, green onion and red pepper. Cook, stirring for 3 minutes or until vegetables are softened.
  3. Stir eggs, salt and pepper into the vegetable mixture. Cook, stirring until eggs are set, about 1 to 2 minutes.
  4. Toast English muffin in the toaster. Spoon half of the egg mixture on top of each muffin half and top with pepper jack cheese.
  5. Place muffins on a baking sheet and place under the broiler for 1 to 2 minutes or until cheese is melted and bubbly.
  6. Serve with a drizzle of salsa on top. Season with salt and pepper, as desired.

  • Or go Mediterranean with spinach, artichokes, olives and mozzarella cheese; south of the border with crumbled chorizo, beans and pepper jack cheese; or Hawaiian with a mix of chopped ham, mozzarella cheese and crushed pineapple.
