Ingredients
  • 8 ounces fresh mozzarella cheese, sliced
  • 4 (⅜-inch) slices eggplant
  • 1 red pepper, quartered and seeded
  • 4 (⅛-inch) slices red onion
  • 1 zucchini, thinly sliced lengthwise
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 8 slices sourdough bread
  • Chopped fresh basil leaves
Instructions
  1. Bring mozzarella to near room temperature.
  2. Brush vegetables with oil and vinegar mixture.
  3. Grill vegetables 5 minutes per side until tender.
  4. Lightly grill bread on one side; top plain side with mozzarella.
  5. Layer vegetables on bread, drizzle with remaining oil/vinegar.
  6. Sprinkle with basil and top with cheese-side bread.
