Ingredients
- 8 ounces fresh mozzarella cheese, sliced
- 4 (⅜-inch) slices eggplant
- 1 red pepper, quartered and seeded
- 4 (⅛-inch) slices red onion
- 1 zucchini, thinly sliced lengthwise
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 8 slices sourdough bread
- Chopped fresh basil leaves
Instructions
- Bring mozzarella to near room temperature.
- Brush vegetables with oil and vinegar mixture.
- Grill vegetables 5 minutes per side until tender.
- Lightly grill bread on one side; top plain side with mozzarella.
- Layer vegetables on bread, drizzle with remaining oil/vinegar.
- Sprinkle with basil and top with cheese-side bread.
