Ingredients
- 1½ cups old-fashioned rolled oats
- ½ cup oat flour, or finely blended oats
- 1 cup plain Greek yogurt
- ½ cup cream cheese, room temperature
- ¼ cup sweetened condensed milk
- 2 Tbsp. whole milk, or heavy cream
- 2 Tbsp. unsalted butter, melted
- ⅓ cup honey
- ⅓ cup chopped nuts, such as almonds, pecans, or walnuts
- ¼ cup dried fruit, such as cranberries, chopped apricots or cherries
- 2 Tbsp. chia seeds, or ground flaxseed
- ½ tsp. pure vanilla extract
- ¼ tsp. kosher salt
Instructions
- Beat cream cheese in a large bowl until smooth. Add yogurt, sweetened condensed milk, milk, butter, honey, vanilla and salt until smooth.
- Add oats, oat flour, chopped nuts, dried fruit and chia seeds, mixing until a soft dough forms that holds together when pressed. If mixture is too soft, let it sit until oats and seeds hydrate and thicken slightly, about 5-10 minutes.
- Portion mixture into twelve, 1- to 2-tablespoons-sized balls of dough, rolling and placing on a parchment-lined, rimmed baking sheet or plate.
- Chill for at least 1 hour, or until firm. Serve and enjoy.
Notes/Additions
Tip: Keep bites stored in an airtight container in the refrigerator for up to one week.
