Ingredients
  • 1½ cups old-fashioned rolled oats
  • ½ cup oat flour, or finely blended oats
  • 1 cup plain Greek yogurt
  • ½ cup cream cheese, room temperature
  • ¼ cup sweetened condensed milk
  • 2 Tbsp. whole milk, or heavy cream
  • 2 Tbsp. unsalted butter, melted
  • ⅓ cup honey
  • ⅓ cup chopped nuts, such as almonds, pecans, or walnuts
  • ¼ cup dried fruit, such as cranberries, chopped apricots or cherries
  • 2 Tbsp. chia seeds, or ground flaxseed
  • ½ tsp. pure vanilla extract
  • ¼ tsp. kosher salt
Instructions
  1. Beat cream cheese in a large bowl until smooth. Add yogurt, sweetened condensed milk, milk, butter, honey, vanilla and salt until smooth.
  2. Add oats, oat flour, chopped nuts, dried fruit and chia seeds, mixing until a soft dough forms that holds together when pressed. If mixture is too soft, let it sit until oats and seeds hydrate and thicken slightly, about 5-10 minutes.
  3. Portion mixture into twelve, 1- to 2-tablespoons-sized balls of dough, rolling and placing on a parchment-lined, rimmed baking sheet or plate.
  4. Chill for at least 1 hour, or until firm. Serve and enjoy.

Notes/Additions

Tip: Keep bites stored in an airtight container in the refrigerator for up to one week.
