Ingredients
  • 1 cup plain Greek yogurt
  • 1 raw beet
  • ¼ cup diced cucumber
  • ¼ cup shredded carrots
  • ¼ cup chopped lettuce
  • 2 Tbsp. chopped olives
  • 1 tsp. fresh lemon juice
  • 1 tsp. chopped fresh dill
  • ½ tsp. minced garlic
  • 1 Tbsp. olive oil
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees.
  2. Peel and dice the raw beet.
  3. Toss the diced beet with 1 tablespoon of olive oil and a pinch of salt and pepper.
  4. Spread the diced beet on a baking sheet and roast for 20-25 minutes, or until tender.
  5. Dice the cucumber and shred the carrots. Finely chop the dill and mince the garlic.
  6. In a bowl, mix the plain Greek yogurt, roasted beets, diced cucumber and shredded carrots.
  7. Top with the chopped lettuce and olives.
  8. Finish the bowl with the fresh lemon juice, and garnish with fresh dill and minced garlic. Season with a pinch of salt and pepper and serve.
