Ingredients
- 1 cup plain Greek yogurt
- 1 raw beet
- ¼ cup diced cucumber
- ¼ cup shredded carrots
- ¼ cup chopped lettuce
- 2 Tbsp. chopped olives
- 1 tsp. fresh lemon juice
- 1 tsp. chopped fresh dill
- ½ tsp. minced garlic
- 1 Tbsp. olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400 degrees.
- Peel and dice the raw beet.
- Toss the diced beet with 1 tablespoon of olive oil and a pinch of salt and pepper.
- Spread the diced beet on a baking sheet and roast for 20-25 minutes, or until tender.
- Dice the cucumber and shred the carrots. Finely chop the dill and mince the garlic.
- In a bowl, mix the plain Greek yogurt, roasted beets, diced cucumber and shredded carrots.
- Top with the chopped lettuce and olives.
- Finish the bowl with the fresh lemon juice, and garnish with fresh dill and minced garlic. Season with a pinch of salt and pepper and serve.
