Ingredients
For Chicken:
- 5 ancho chiles, stemmed/seeded
- 3 guajillo chiles, stemmed/seeded
- ¼ cup olive oil
- 1 white onion, chopped
- 1 head garlic, halved
- 2 teaspoons cumin seed
- 2 bay leaves
- 6 cups chicken broth
- 2 (15.5-ounce) cans hominy
- 12 boneless chicken thighs (about 3 lbs)
- Cotija cheese
For Lime Yogurt:
- ⅔ cup Greek yogurt
- 2 tablespoons lime juice
- Zest of 1 lime
- 2 teaspoons honey
Instructions
