Ingredients

For Chicken:

  • 5 ancho chiles, stemmed/seeded
  • 3 guajillo chiles, stemmed/seeded
  • ¼ cup olive oil
  • 1 white onion, chopped
  • 1 head garlic, halved
  • 2 teaspoons cumin seed
  • 2 bay leaves
  • 6 cups chicken broth
  • 2 (15.5-ounce) cans hominy
  • 12 boneless chicken thighs (about 3 lbs)
  • Cotija cheese

For Lime Yogurt:

  • ⅔ cup Greek yogurt
  • 2 tablespoons lime juice
  • Zest of 1 lime
  • 2 teaspoons honey
Instructions
  1. Prep Chiles: Roast at 275° F for 10 min
  2. Make Sauce: Sauté aromatics, blend with chiles and broth
  3. Cook Chicken: Simmer thighs in sauce 2½ hours
  4. Make Yogurt: Whisk ingredients together
