Ingredients
  • 8 slices pepper jack or chipotle cheddar cheese
  • 2 Anaheim or poblano peppers (roasted and peeled)
  • 6 slices cooked bacon
  • 2 Roma tomatoes, thinly sliced
  • 2 tablespoons chopped fresh cilantro
  • 8 slices sourdough or multigrain bread
  • 2 tablespoons softened butter
Instructions
  1. Assemble Sandwiches:
    • Place 1 slice cheese on 4 bread slices
    • Layer with:
      • ¼ of roasted peppers
      • 1½ slices bacon
      • Tomato slices
      • Cilantro
    • Top with second cheese slice and bread
  2. Cook:
    • Butter outsides of sandwiches
    • Grill in skillet 3 minutes per side until golden
