Ingredients
- 8 slices pepper jack or chipotle cheddar cheese
- 2 Anaheim or poblano peppers (roasted and peeled)
- 6 slices cooked bacon
- 2 Roma tomatoes, thinly sliced
- 2 tablespoons chopped fresh cilantro
- 8 slices sourdough or multigrain bread
- 2 tablespoons softened butter
Instructions
- Assemble Sandwiches:
- Place 1 slice cheese on 4 bread slices
- Layer with:
- ¼ of roasted peppers
- 1½ slices bacon
- Tomato slices
- Cilantro
- Top with second cheese slice and bread
- Cook:
- Butter outsides of sandwiches
- Grill in skillet 3 minutes per side until golden
Notes/Additions
- Cheese Options: Havarti with jalapeño works well
