Ingredients
  • 1 medium sweet potato
  • 1 canned chipotle pepper in adobo sauce
  • 2 Tbsp. fresh lime juice
  • 2-3 Tbsp. salsa
  • ¼ cup shredded pepper jack cheese
Instructions
  1. Preheat oven to 350 degrees. Bake sweet potato 45 minutes or until tender. Let cool slightly and peel.
  2. Place baked sweet potato in small food processor or blender; add remaining ingredients. Pulse until well combined
  3. Serve warm or at room temperature with fresh vegetables, crackers, or tortilla or vegetable chips.
