Ingredients
- 1 medium sweet potato
- 1 canned chipotle pepper in adobo sauce
- 2 Tbsp. fresh lime juice
- 2-3 Tbsp. salsa
- ¼ cup shredded pepper jack cheese
Instructions
- Preheat oven to 350 degrees. Bake sweet potato 45 minutes or until tender. Let cool slightly and peel.
- Place baked sweet potato in small food processor or blender; add remaining ingredients. Pulse until well combined
- Serve warm or at room temperature with fresh vegetables, crackers, or tortilla or vegetable chips.
