Ingredients
Nacho Cheese:
- 4 cups grated extra-sharp cheddar cheese
- 1½ cups grated Monterey Jack cheese
- 1 tablespoon cornstarch
- ¼ cup whole milk
- 4 ounces pickled jalapeño juice
- 1 (15-ounce) bag tortilla chips
Texas Chili:
- 1 pound ground beef
- ½ cup chopped onion
- 2 teaspoons minced garlic
- 1 (15-ounce) can tomato sauce
- 2-3 teaspoons chili powder
- 1 tablespoon salt
- ¼ teaspoon black pepper
Pico de Gallo:
- 2 medium tomatoes, diced
- 1 onion, finely chopped
- 2 sprigs fresh cilantro, finely chopped
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
Instructions
- Nacho Cheese:
- Combine cheeses, milk and cornstarch in saucepan
- Cook 10-15 min on low until smooth
- Stir in jalapeño juice
- Texas Chili:
- Brown beef with onion and garlic
- Drain fat; add remaining ingredients
- Simmer covered 30 min
- Pico de Gallo:
- Mix all ingredients
- Assemble:
- Layer chips, chili, cheese and pico
