Ingredients

Nacho Cheese:

  • 4 cups grated extra-sharp cheddar cheese
  • 1½ cups grated Monterey Jack cheese
  • 1 tablespoon cornstarch
  • ¼ cup whole milk
  • 4 ounces pickled jalapeño juice
  • 1 (15-ounce) bag tortilla chips

Texas Chili:

  • 1 pound ground beef
  • ½ cup chopped onion
  • 2 teaspoons minced garlic
  • 1 (15-ounce) can tomato sauce
  • 2-3 teaspoons chili powder
  • 1 tablespoon salt
  • ¼ teaspoon black pepper

Pico de Gallo:

  • 2 medium tomatoes, diced
  • 1 onion, finely chopped
  • 2 sprigs fresh cilantro, finely chopped
  • ⅛ teaspoon salt
  • ⅛ teaspoon pepper
Instructions
  1. Nacho Cheese:
    • Combine cheeses, milk and cornstarch in saucepan
    • Cook 10-15 min on low until smooth
    • Stir in jalapeño juice
  2. Texas Chili:
    • Brown beef with onion and garlic
    • Drain fat; add remaining ingredients
    • Simmer covered 30 min
  3. Pico de Gallo:
    • Mix all ingredients
  4. Assemble:
    • Layer chips, chili, cheese and pico
